What about creating SOG servers for new games ?

uhm... SOG used to have a BF2 server for some time.

The problem is, servers cost money and SOG cant simply create lots of servers for any game they'd like.

indeed, we are considering it. not in the near future tho as like spec said the servers cost money to run and if no-one plays on it then we are wasting the money. however it is good to see you are thinking of things like this. ;)
